Abstract

MD. MUSIKA SIMANJUNTAK. Nutritional Quality Test and Organoleptic Test and Growth of Water Spinach (Ipomoea reptans Poir) Biofortification Results of Iodine Cultivated Hydroponically. (Supervised by SUSILAWATI and MUNANDAR). This study aims to determine the nutritional quality, organoleptic quality or people's preferences, and the growth of water spinach plants produced by iodine biofortification as an alternative source of iodine cultivated hydroponically. The research was conducted from August to September 2 020 at the Hydroponic House, Faculty of Agriculture, Sriwijaya University, Indralaya Campus, South Sumatra. The treatment consisted of 2, there are 0 ppm and 25 ppm iodine treatment, the results of the observations were analyzed using t test and descriptive test. The results showed that 25 ppm treatment tended to inhibit the growth of water spinach plants, but increased leaf chlorophyll content. Based on the nutritional quality test, iodine biofortification (25 ppm) increased the nutritional content of water spinach plants in the form of iodine, total sugar, crude fiber, vitamin C, and ash content. Organoleptic test results showed that water spinach plants with 25 ppm iodine treatment preferred by the panelist, with dark green color, and fresh and firm texture.
