Abstract

This study aims to determine the characteristics of ganyong starch-based composite edible film containing salam leaf extract and gambier extract. A Factorial Completely Randomized Design was used and consisted of treatment factors, namely addition of gambier extract (1, 2 and 3% ( w/v)) and salam leaf extract (0, 3 and 6 %, (w/v)). All experiment was conducted in triplicates. The observed parameters were physical (thickness, percent of elongation and water vapor transmission rate), functional (antioxidant activity), and microbiological characteristics (antibacterial activity). The results showed that gambir addition had siginificant effects on thickness, water vapor transmission rate, antioxidant activity and antibacterial activity. On the other hand, addition of salam leaf extract showed significant effects on thickness, water vapor transmission rate and antioxidant activity. Furthermore, interaction of the two factors showed significant effect only on thickness of edible film. Based on water vapor transmission rate, antioxidant activity and antibacterial activity, addition of 3% gambier extract and 9% salam leaf extract was concluded as the best treatment.
