Abstract

The objective of this research was to determine the effect of immersion or soaking in solution of sodium metabisulfite and ascorbic acid with different concentrations on the physical and chemical characteristics of the purple sweet potato flour. This study used a factorial randomized block design with two treatment factors, namely factor A (type of soaking solution) which consisted of two treatment levels and factor B (concentration of soaking solution) which consisted of four treatment levels. The parameters observed in this study included physical (color, browning index, swelling power and solubility), and chemical characteristics (moisture, ash, and total anthocyanin content). The type of soaking solution factor significantly increased the value of redness, browning index, ash content and anthocyanin content, but decreased the lightness and yellowness value of purple sweet potato flour, while the soaking solution concentration factor significantly increased the redness, browning index, and anthocyanin content, but decreased yellowness and moisture content. The interaction of type of soaking solution and concentration of soaking solution significantly increased value of redness, browning index, and anthocyanin levels
