Abstract

The objective of this research was to find the formula of instant baby porridge for complementary food with red rice, snakehead fish and pumpkin that approved by SNI. This research was held at Agriculture Product Chemistry Laboratory, Agriculture Faculty, Sriwijaya University, Inderalaya. The research was held in 2nd of November to 8th of December 2020. This research used a Non Factorial Completely Randomized Design consisted of one factor namely formulation of red rice, snakehead fish and pumpkin with 8 levels of treatment that each treatments were conducted in triplicates. The observed parameters were physicals characteristics (L*, a*, b*, water absorption, viscosity, and rehydration time) and chemical characteristics (moisture, ash, protein, fat, and carbohydrate content). The result of this research showed that the formulation of instant baby porridge for complementary food with red rice, sneakhead fish and pumpkin had significant effects on colour (L*, a*, b*), water absorption, viscosity, rehydration time, moisture content, ash content, protein, fat, dan carbohydrate. Red rice 20% : sneakhead fish 25% : pumpkin 10% was considered the best treatment based on chemical characteristics (ash, protein, and fat contents) that fulfilled Indonesian National Standard. The value of chemical characteristics were ash 2.79%, protein 21.79% and fat 12.46%.
