Abstract

Pineapple is a tropical fruit with a high sugar content especially queen variety it’s not recommend for people with glucose tolerance disorder. Ultrasonication can be used as an effort to treating pineapple.This study aimed to determine the effect of ultrasound frequency and contact time on the physical and chemical characteristics of fresh cut pineapple of queen variety. The experiment was designed as a Factorial Completely Randomized Design (RALF) with two treatment factors ultrasound frequency (20 kHz and 40 kHz) and contact time (10, 15, 20, 25, 30 and 40 minutes) each treatment was repeated three times. The observed parameters on pineapple were color (lightness (L*), redness (a*), yellowness (b*) and total color difference (ΔE*)), texture, total sugar content, pH and vitamin C content. The results showed that contact time had a significant effect on the total sugar content, pH, lightness and redness of fresh cut pineapple; The interaction of ultrasound frequency and contact time had a significant effect on the yellowness of fresh cut pineapple. The A2B6 treatment (40 kHz, 40 minutes) was the best treatment based on the lowest total sugar content 5.53%°brix with a characteristic of pH 4.10, vitamin C content 10.33 mg/100 g, lightness 51.37%, redness 4.57, yellowness 14.30, total color difference 31.4 and texture 37.56 gf
