Abstract

This research was aimed to determine the best concentration of pineapple stem extract and water solvent in the decaffeination process of arabica green coffee beans. This research was held on December 2020 to February 2021 in Segamit Village, Semendo Darat Ulu District, Muara Enim Regency and the Laboratory of Agricultural Chemistry Products, Sriwijaya University, Palembang. The process of analyzing the characteristics of coffee was carried out using the Factorial Completely Randomized Design (FCRD) method. The first treatment was pineapple stem extract concentrations, namely 6% (A1), 9% (A2), and 12% (A3). The second treatment was Arabica coffee beans diameter, namely large (B1) and medium (B2) according to SNI 01-2907-2008. The results showed that the concentration of pineapple stem extract, the diameter of coffee bean, and the interaction of the two treatments had a significant effect on the value of water content, caffeine content, ash content, fat content, protein content, and carbohydrate content of decaffeinated coffee. The highest caffeine, protein, and fat content values were in the A1B1 respectively 0.45%, 9.61%, and 11.34%, while the lowest value were in the A3B2 respectively 0.28%, 4.96%, and 7.63%. The highest value of water content and ash content were in the A3B1 respectively 6.50% and 3.53%, while the lowest value were in the A1B2 respectively 4.93% and 3.05%. The highest value of carbohydrate content in the A3B2 was 78.21%, while the lowest carbohydrate content value in the A1B1 was 70.36%.
