Abstract

This study aims to determine the effect of adding the gambier filtrate and roselle flower petals extract on the functional properties of the resulting edible film. This study used a factorial randomized block design with two treatment factors and each treatment was repeated three times. The first factor was the addition of the gambier filtrate (3%, 4% and 5%) and the second factor was the addition of roselle extract (2%, 4% and 6%). The parameters observed in this study were thickness, tensile strength, percent elongation, water vapor transmission rate, antioxidant activity and antibacterial activity. The results showed that the addition of the gambier filtrate concentration had a significant effect on thickness, tensile strength, percent elongation, water vapor transmission rate, antioxidant activity and antibacterial activity. Meanwhile, the addition of roselle extract concentration significantly affected thickness, percent elongation, water vapor transmission rate and antibacterial activity. The interaction of treatment with the addition of gambir filtrate and rosella extract showed a significant difference to the thickness of the edible film. A3B1 treatment (5 % gambier filtrate concentration and 2 % rosella extract) is the best treatment based on the average thickness of 0.12 mm, tensile strength of 2.00 MPa, percent elongation 24.92 %, water vapor transmission rate 16.12 g/m2/hr, antioxidant activity IC50 37.03 ppm and antibacterial activity 1.41 mm.
