Abstract

Tempe is a traditional food from the fermentation process of soybeans. Pegagan plant (Centella asiatica) is one of the herbs that has strong antioxidant content. Antioxidant is a substance that can ward off the dangers of free radicals. Toddlers are one of the vulnerable groups that are important to care. The environment must be maintained because toddlers are very susceptible to exposure to free radicals from The purpose of this study was to analyze antioxidants and proximate and organoleptic characteristics of tempe nugget with the addition of pegagan leaves (Centella asiatica). This study used an experimental design with Completely Randomized Design (CRD) method with 4 (four) treatments, namely variations in the addition of the formula for tempe and pegagan leaves, A0:40 g tempe and 0 g pegagan leaves (0%), A1: 36 g tempe and pegagan leaves 4 g (10%), A2: tempe 32 g and pegagan leaves 8 g (20%), A3: tempe 28 g and pegagan leaves 12 g (30%). The results showed that the organoleptic test of tempe nugget with the addition of pegagan leaves (Centella asiatica) was the most preferred based on the criteria for taste, aroma, color, and texture was nugget with treatment A2 with a score of very like, each taste 90%, aroma 73.3%, color 93.3%, and texture 86.7%. Based on the results of proximate and antioxidant analysis, formulation A2 contained crude fiber content of 0.9889%, ash content 2.5147%, water content 41.8767%, fat content 7.1407%, protein content 13.7156%, carbohydrate content 34, 0379%, and energy 198.2798 kcal, and moderate antioxidant activity IC50 of 131.15 ppm. The conclusion of this study were that the A2 formulation contains good nutrition and has met SNI nuggets except for the carbohydrate content. Further processing of tempe nuggets and pegagan leaves needs to be done to increase preferences, acceptability, and quality of nuggets to consumers.
