Abstract

This study aims to study the performance of a deep fryer for potato chips with an automatic temperature and time controller on the tool. This research was conducted from September 2020 to March 2021 at the Workshop Machinery Workshop, Faculty of Agriculture, Indralaya Campus, Sriwijaya University. This research uses descriptive data method and presentation in the form of tables and graphics, which then the data becomes a reference in making a description of the performance test of the potato chip fryer. The parameters observed included the yield of potato chips (%), the rate of fuel consumption (kg / hour), the demand for electrical energy (Wh). The results showed that the temperature and time controllers in the potato chip fryer could operate according to the desired treatment. For frying with a temperature of 165⁰C, the yield value is 26.6%. For the need for electrical energy used is 5.8 Wh, and the fuel requirement used is 0.244 kg / hour. The increase in the rate of fuel consumption and the need for electrical energy occurs with time and the temperature used increases. The higher the temperature used, the lower the yield value is.
