Abstract

The purpose of this study was to determine the effect of extraction time and the ratio of material to solvent on the physical and chemical characteristics of areca nut powder extract. This research was conducted from February 2021 to August 2021 at the Chemical Laboratory of Agricultural Products, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University. This study used a Factorial Completely Randomized Design (CRD) with two treatment factors and each treatment factor was repeated three times. The first factor is extraction time (A) (2 minutes, 4 minutes, 6 minutes and 8 minutes) and the second factor is the ratio of material to solvent (B) (1:15 w/v and 1:30 w/v). The parameters observed included physical characteristics (yield, browning index and color (L*, a*, b*) and chemical characteristics (pH, total phenol, antioxidant activity, and total dissolved solids).The results showed that the extraction time treatment factor had an effect on significantly to yield, browning index, color (L*, a*, b*), total phenol, antioxidant activity and total dissolved solids. The ratio of material to solvent treatment factor had a significant effect on yield, browning index, color (L*, a*, b*), pH, total phenol, antioxidant activity and total dissolved solids. The interaction factor between the treatment factor of extraction time and the ratio of material to solvent had a significant effect on the yield, total phenol and antioxidant activity. A3B2 treatment (extraction time 6 minutes; ratio of material to solvent 1:30 w/v) became the treatment with the best chemical properties including the highest total phenol of 58.09 mg TAE/g and the highest antioxidant activity of 49.67 ppm.
