Abstract

Takokak, commonly known as turkey berry, belongs to the eggplant type vegetable group. Vitamin A in plant foods is in the form of provitamin A. An example of provitamin A is β-carotene. β-carotene is the most active form of provitamin A, β-carotene itself has chemical properties similar to vitamin A. Vitamin A deficiency causes systemic diseases affecting and disrupting cells and tissues throughout a person's body. The aims of this study were to determine the formulation of wet noodles with the addition of takokak (solanum torvum), to analyze the provitamin A content and organoleptic characteristics of wet noodles with the addition of takokak (solanum torvum). This study used an experimental design with Completely Randomized Design (CRD) method with 4 treatments, namely each formulation added wheat flour 100%, 90%, 85%, 80, and 0%, 50%, 75% and 100% takokak and 100%, 60%, 40%, 20% water. The results of this study indicate that the test results of the β-carotene content of wet noodles with the use of takokak (Solanum torvum) are known to contain β-carotene in the formulation A0 140.8604 .g/100 g, A1 480.0268 .g/100 g, A2 671.2548 .g/100 g, and A3 810.2907 .g/100 g. based on the results of organoleptic tests, the formulation that was highly favored by the panelists was the wet noodle formulation with code A2 with the percentage of very much like color 73.3%, taste 73.3%, texture 63.3%, aroma 73.3%. The conclusion of this study is that the formulation that the panelists prefer is the formulation with code A2 with β-carotene content of 671.2548 .g/100 g equivalent to 111.8758 RE when associated with the nutritional adequacy rate for vitamin A, This formulation can contribute to the daily needs of 17.21% for men aged 16-18 years, 15.98% for men aged 19-80+ years and 18.64% for women aged 10-80+ years.. Further research is needed on the nutritional content (proximate) of wet noodles using takokak (Solanum torvum).
