Abstract

The objective research was to determine the effect of palm oil and salam leaf extract on physical and chemical of edible film. The research used a Faktorial Completely Randomized Design (RALF) with two treatment factors, namely addition of palm oil 0, 1.0 and 1.5%) and salam leaf extract (0, 3.0 and 6.0%). All experiment was conducted in tripicates. The observed parameters were physical (thickness, percentage of elongation and water vapour transmission rate), chemical (tatol phenol and antioxidant activity), and microbiological (antibacterial activity) characteristic. The results showed that addition of palm oil sif=gnificantly affected edible film thickness. On the other hand, addition of salam leaf extract significantly affected the antibacterial activity of the edible film. The best edible film was formulated with 1.5% palm oil and 6% leaf extract based on percent elongation, water vapour transmission rate, total phenol, antioxidant, and antibacterial activity.
