Abstract

Healthy canteens focus on preventing food and beverage disruptions, from the production process, preparation, transportation to ready-to-eat food. A healthy diet is a menu with a balanced composition and content. The Faculty of Medicine, Sriwijaya University, has a canteen facility at Madang Campus. This study aimed to describe student preferences regarding healthy canteen menus at the Faculty of Medicine, Sriwijaya University, Madang Campus. This research used was a cross-sectional descriptive observational study through a questionnaire. From the 646 samples, most were female (72.4%), lived at their parent’s house/closest person (52.8%), ate snacks in the canteen (70.1%), bought ready-to-eat food (65%), daily pocket money 20,000-30,000 (34.1%), be satisfied for the food and beverage menu in the earlier canteen from taste, presentation appearance, menu variations, availability of ordered menus, suitability of prices and nutritional content, preferenced for meal food (85.1% ), especially Fried Chicken with Rice and Vegetables, Meatballs, and Fried Rice, preference for drinks without added sugar, especially Bottled Mineral Water, Fruit Juices, and High-temperature Milk, the menu portion be determined by the seller (54%), chose unhealthy menu restrictions (46, 9%) with a list of menus, prices, and nutritional content (49.8%). Data were collected, processed by SPSS, and presented in the form of tables and graphs. There is a difference with previous research regarding the preference factors of male and female students, which resulted in the same healthy canteen menu preferences due to a busy class schedule, the desire to save time and costs, and choosing their menu.
