Abstract

Sesame seed oil and probiotics are functional food products that in this research both component tested to its antibacterial properties. This research conducted to determine the combination of these two functional foods had better antibacterial properties compared to the single use of each component. Antibacterial activity test using disc paper method, the MIC test using liquid microdillution method, and the MBC test using the Total Plate Count (TPC) method. The results of the GC-MS analysis showed that fatty acid compounds with the highest concentration, linoleic acid (36.57%) and oleic acid (27.59%), followed by palmitate acid (10.12%) and stearic acid (4.37%). The concentration of oil used in antibacterial activity test is 40%, 20%, 10%, 5%, 2.5%, 1.25%, and 0.625% for the MIC test and probiotic metabolites used by the concentration of 100%, 50%, 25%, 12 , 5%, 6.25%, and 3.125%. The result of the MIC sesame oil at concentration of 20%, and the result of the MIC probiotic metabolite at concentration of 50%, these two activity tests showed a significant difference (p <0.05) to other concentrations. In this research, discovered 40% concentration as a MBC of sesame oil, and 100% as the MBC of probiotic metabolite. Determination the synergism of two components is based on the MIC combination obtained at (oil-metabolites) 2.5% -25% concentration, showed that a partial synergistic combination based on these two components’ FIC value of 0.625. The result of the antibacterial activity test combination of oil-metabolite concentration, 10%-25%, showed a strong activity based on inhibitory diameter zone of 15,36 ± 0,251 mm.
