Abstract

Preparation and characterization of edible film from dioscorea starch which incorporated with liquid smoke of coconut shell had been successfully conducted. Antibacterial activities of edible film was conducted by standar plate count (SPC). Antioxidant activity test has performed with a spectrofotometric method using DPPH as a radical source. Determination of liquid smoke content test was used GC-MS. The result of the research showed that edible film that had best composition consisting of 6 g of Dioscorea starch, 0.75 g of CMC, 3 mL glycerol, and 100 mL of distilled water. Variations in the concentration of the liquid smoke which incorporated into edible film starts at 1%; 2%; 3%; 4%; and 5% (w/v). Edible film that contain liquid smoke has ability to inhibit the growth of Bacillus cereus. The lowest doing of B. cereus was found on edible films with concentration of 5% liquid smoke (70% decreasing). At compounds contained in liquid smoke which was incorporated into edible films had not been able to muffle DPPH radical. The IC50 values obtained from a solution of edible films is greater than 50 ppm. The compound that was trapped in liquid smoke were 2-pyridinepropanoic acid, 2-furancarboxaldehyde, phenol, 2-methoxyphenol, and Bicyclo[3.3.1 ]nonan-9-one, 2.4-dimethyl-3-nitro. This research also examined the physical properties of edible film such as tensile strength, percent elongation, and thickness. The more the liquid smoke added, the more thickness increased, but the tensile strength and percent elongation was decreased.
