Abstract

The research about preparation of monoacylglycerol (MAG) from candlenut oil was done. Candlenut oil was produced by extraction using hydraulic press. Preparation of MAG from candlenut oil was carried out in a glycerolysis reaction consisting mixture of candlenut oil/n-hexane/glycerol/rice bran in the ratio of 2 : 40 : 0.8 : 10 (w/v/w/w) and was agitated at 300 rpm for 70 hours (MAG 70) and 72 hours (MAG 72). Rice bran was used as a source of lipase enzyme. According to GC analysis of candlenut oil fatty acids, indicated that MAG major produced were monoolein (MCI 8:1), monolinolein (MC 18:2), and monolinolenin (MC 18:3). Separation of reaction product was done by Preparative TLC, and produce 0.028 g MAG (1.4%) for MAG 70 and 0.074 g MAG (3.7%) for MAG 72. The antibacterial test of MAG against Bacillus cereus done by well diffusion methode and produced inhibition zone was 94.59 mm2 for MAG 70 and 87.92 mm2 for MAG 72.
