Abstract
Tujuan penelitian ini adalah untuk menganalisis perubahan warna buah jeruk menggunakan program pengolahan citra dan mengetahui hubungan antara perubahan warna buah jeruk terhadap sifat fisika serta kimianya selama proses degreening berlangsung. Penelitian ini dilaksanakan di bengkel, laboratorium Kimia Hasil Pertanian dan laboratorium Mikrobiologi Jurusan Teknologi Pertanian, Fakultas Pertanian Universitas Sriwijaya Indralaya, pada bulan Juli 2008 sampai bulan Mei 2009. Analisis data dalam penelitian ini berupa bentuk hubungan antara persentase warna kuning dengan susut bobot, volume, kekerasan, gula total dan asam total buah jeruk. Hasil penelitian ini menunjukkan selama 96 jam proses degreening diperoleh persentase warna kuning buah jeruk sebelum dan sesudah proses degreening sebesar 1,68% dan 98,12%, susut bobot menurun 0,77%, volume menurun 0,68%, kekerasan menurun 1,77%, gula total meningkat 1,89% dan asam total menurun 1,06%. Persentase warna kuning dengan susut bobot, volume, kekerasan, gula total dan total mempunyai hubungan kuadratik dengan nilai R2 masing-masing 0.8761, 0.8757, 0.8847,0.9206 dan 0.8429.
