Abstract

The purpose of this study was to determine of ripening of roasted coffee - beans through physical and Chemical analysis by using image processing metbod. This study was conducted from November 2008 to June 2008 Agricultural Workshop and Computer Laboratory of Agricultural Engineering Study Program, Agricultural Technology Department, Agricultural Faculty of Sriwijaya University. Data analysis in this study was conducted in term of color in relation to moisture, organoleptic test that consisted of color, aroma and color measurement by using color reader CR - 10. The result showed that the roasted coffee beans were ripening if the roasting time was seventy five minutes with moisture content of 1.118 %. lightness of 28.6, chroma of 10.3, and hue of 53.5. The result of organoleptic test showed that the panel i st likes the roasted coffee beans with the roasting time seventy five minutes, with color of 3.30 and aroma of 3.40, light value of 28.6, chroma of 10.3, and hue of 53.5 with brown color percentage of 0.03 as well as browning index of 0.331.
