Abstract

Penelitian ini betujuan untuk mengetahui pengaruh ampas kunyit (Curcuma longa) terhadap warna, aroma dan rasa pada telur asin asap. Penelitian ini dilakukan pada bulan Juni sampai dengan April 2019 di Laboratorium Nutrisi dan Makanan Ternak Program Studi Teknologi dan Industri Peternakan Jurusan Peternakan Fakultas Pertanian Universitas Sriwijaya. Penelitian ini menggunakan Uji Statistik yang terdiri dari 2 perlakuan dan 5 ulangan. Perlakuan terdiri dari P0 (Kontrol), dan P1(Pengasinan dengan menggunakan ampas kunyit). Parameter yang diamati adalah warna, aroma dan rasa telur asin asap dengan tambahan ampas kunyit. Hasil penelitian menunjukan bahwa penambahan ampas kunyit pada telur asin asap tidak berpengaruh nyata (P>0,05) terhadap warna, aroma, dan rasa pada telur asin.
