Abstract

Penelitian ini bertujuan memperpanjang umur simpan telur ayam dengan pelapisan komposit lilin lebah dan pati. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Fakultas Pertanian Universitas Sriwijaya Indralaya dan Laboratorium Imunologi dan Serologi Rumah Sakit Umum Mohammad Hoesin Palembang. Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial dengan dua faktor perlakuan. Konsentrasi lilin lebah (0.5 %, 1 % dan 2 %) konsentrasi pati (3 %, 4 % dan 5 %) masing-masing kombinasi perlakuan diulang sebanyak tiga kali. Hasil penelitian menunjukkan bahwa konsentrasi lilin lebah dan konsentrasi pati berpengaruh nyata terhadap penurunan indeks kuning telur dan warna (lightness, chroma dan hue, tetapi tidak berpengaruh nyata terhadap susut bobot dan kadar air putih telur. Perlakuan konsentrasi lilin lebah 0,5% dan konsentrasi pati 3% merupakan perlakuan terbaik untuk memperpanjang umur simpan telur ayam sampai 4 minggu pada suhu 28±2 °C.
