Abstract

Penelitian ini bertujuan untuk mengetahui karakteristik minuman segar niraling yang dikemas dalam gelas plastik dengan penambahan asam sitrat dan menduga umur simpannya. Rancangan yang digunakan dalam penelitian ini adalah Rancangan Acak Lengkap yang disusun secara factorial perlakuan dan tiga ulangan. Perlakuan pertama yaitu penambahan asam sitrat dengan dua factor (0,1%, 0,2%, dan 0,3%) dan perlakuan kedua lama penyimpanan (1, 2, 3, dan 4 minggu). Kontrol (tanpa penambahan asam sitrat) sebagai pembanding perlakuan. Hasil penelitian ini menunjukkan bahwa perlakuan penambahan asam sitrat dan lama penyimpanan berpengaruh sangat nyata terhadap kadar asam total, pH, dan kadar gula reduksi. Kadar asam total meningkat dengan penambahan asam sitrat dan lama penyimpanan, sedangkan pH dan kadar gula reduksi menurun dengan penambahan asam sitrat dan lama penyimpanan. Total koloni mikrobia tertinggi 4,9 x 108 cfu/mL terdapat pada perlakuan penambahan asam sitrat 0,1% dan lama penyimpanan 4 minggu (S1U4) sedangkan total koloni mikrobia terendah 9,3 x 102 cfu/mL terdapat pada perlakuan penambahan asam sitrat 0,3% dan lama tanpa penyimpanan (S3U0). Minuman segar niraling tanpa penyimpanan dari segi rasa tidak berbeda nyata karena panelis tidak menyukai rasa asam niraling dan dari segi warna panelis lebih menyukai perlakuan penambahan asam sitrat 0,2 % dan tanpa penyimpanan (S2U0). Perubahan visual terjadi pada minggu ke-2 penyimpanan dimana mulai terjadi penurunan mutu produk.
