Abstract

Tujuan penelitian ini adalah untuk mengetahui pengaruh penambahan gula dan gelatin terhadap karakteristik sifat fisik, kimia dan organoleptik permen jeli jeruk kunci {Ciirus hyslix ABC). Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya pada bulan Jui 2013 sampai dengan Februari 2014. Penelitian ini menggunakan metode Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor perlakuan dan tiga ulangan untuk setiap perlakuan. Faktor pertama adalah konsentrasi gula pasir ( 25% dan 50%). Faktor kedua meliputi konsentrasi gelatin (15%, 20%, dan 25 %). Parameter yang diamati meliputi sifat fisik (tekstur dan warna), sifat kimia (kadar air, kadar abu, total padatan terlarut, total asam dan vitamin C), sifat organoleptik (uji hedonik yang meliputi tekstur, warna, dan rasa). Penambahan gula pasir berpengaruh nyata terhadap warna (nilai a*), total asam dan total padatan terlarut Penambahan konsentrasi gelatin berpengaruh nyata terhadap lightness, warna (nilai b*), tekstur, kadar air dan kadar abu. Perlakuan (gula pasir 50% dan gelatin 25%) adalah perlakuan terbaik dengan sifat fisik (tekstur 533.87 gf, lightness 61.27, warna (nilai a*) +7.70 dan (nilai b*) +45.13), sifat kimia (kadar air 27.21%, kadar abu 0.63, total asam 26.80%, total padatan terlarut 11.40 (°Brix), dan vitamin C 51.87 mg/100 ml) dan sifat sensoris dengan nilai (tekstur 2.76, warna 3.00, dan 2.72).
