Abstract
Tujuan penelitian adalah untuk menganalisa sifat fisik, kimia, dan sensoris kue bolu kojo yang telah disubstitusi dengan mocaf (Modified Cassava Flour) sebagai pengganti tepung terigu. Penelitian dilaksanakan di Laboratorium Kimia Hasil Pertanian dan Laboratorium Sensoris, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya pada bulan Agustus 2012 sampai dengan Agustus 2013. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) non Faktorial dengan satu faktor perlakuan dan perlakuan diulang sebanyak 2 (dua) kali. Faktor perlakuan yang diamati yaitu konsentrasi penambahan mocaf (Ai= 0%, A2= 100%, A3= 90%, A4= 80%, A5= 70%, dan A6= 60%). Parameter yang diamati meliputi sifat fisik (tekstur dan warna), sifat kimia (kadar air, kadar abu, kadar serat kasar, kadar lemak, kadar protein, kadar carbohydrate by difference) dan sifat sensoris adalah uji hedonik (warna, aroma, tekstur dan rasa) serta uji segitiga (warna, aroma, tekstur dan rasa). Hasil penelitian menunjukkan bahwa konsentrasi penambahan mocaf berpengaruh nyata terhadap tekstur, warna (lightness, chroma, dan hue), kadar air dan sensoris (tekstur) kue bolu kojo. Kue bolu kojo pada perlakuan A4 (80% mocaf dan 20% tepung terigu) merupakan perlakuan yang paling disukai panelis berdasarkan sifat sensoris (warna, aroma, rasa, dan tekstur), dengan karakteristik tekstur 429.80 gf, warna (lightness 54.45%, chroma 20.75%, dan kue 100.85°), kadar air 41.12%, kadar abu 1.61%, kadar serat kasar 1.53%, kadar lemak 3.14%, kadar protein 14.87%, dan kadar carbohydrate by difference 39.27%.
