Abstract

Tujuan penelitian ini adalah untuk menganalisa karakteristik tepung ganyong modifikasi dari proses modifikasi sehingga dapat memperbaiki tekstur produk yang diaplikasikan pada pangan dan meningkatkan nilai gizi tepung ganyong. dilakukan di Laboratorium Kimia Hasil Pertanian. Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya Indralaya pada bulan Februari 2011 sampai dengan Juni 2011. Penelitian ini menggunakan Rancangan Acak Kelompok Faktorial (RAKF) dengan dua faktor perlakuan dan tiga ulangan. Dua perlakuan yang diamati adalah penambahan jenis starter (A0; tanpa penambahan starter, Ai; penambahan starter ragi roti dan A2; penambahan starter ragi tapai) dan lama fermentasi (Bj ; 24 jam, B2; 48 jam, B3; 72 jam). Parameter yang diamati meliputi rendemen, kadar air, kadar protein, kadar pati, viskositas, warna, suhu dan waktu gelatinisasi, kelarutan tepung dalam air, dan total mikrobia. Hasil penelitian menunjukkan bahwa penambahan starter berpengaruh nyata terhadap lightness, rendemen, kelarutan, kadar pati, waktu gelatinisasi, dan viskositas. Lama fermentasi berpengaruh nyata terhadap lightness, hue, kadar pati dan interaksi perlakuan berpengaruh nyata terhadap kelarutan Perlakuan A2B3 (penambahan starter ragi tapai dan lama fermentasi 72 jam) merupakan perlakuan terbaik karena mempunyai lightness 83,77%, hue 71,7°, rendemen 18,81%, kelarutan 57,55%, kadar pati 12,03%, waktu gelatinisasi 7,33 menit, viskositas 57,33 cPoise dan protein 3,74%.
