Abstract

Tujuan penelitian ini adalah untuk mengevaluasi karakteristik fisik, kimia dan sensoris mi basah dengan penambahan kacang merah (Vigna angularis). Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Fakultas Pertanian Universitas Sriwijaya Indralaya, pada bulan Agustus 2010 sampai dengan November 2010. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan satu faktor perlakuan yaitu konsentrasi penambahan kacang merah yang terdiri dari 5 taraf (0 %, 10 %, 20 %, 30 % dan 40 % per 100 g bahan). Parameter pada penelitian ini yaitu karakteristik fisik (tekstur dan warna), karakteristik kimia (kadar air, kadar abu, kadar serat kasar, kadar protein dan kadar zat besi (Fe), serta karakteristik sensoris dengan menggunakan uji hedonik (kesukaan). Hasil penelitian menunjukkan bahwa formulasi berpengaruh nyata terhadap chroma, hue, kadar air dan kadar abu. Mi kacang merah dengan penambahan 20 % kacang merah merupakan perlakuan terbaik berdasarkan uji sensoris dengan karakteristik tekstur 135,47, wama (65,03 % lightness, 14,53 % chroma, dan 85,37° hue), 2,46 %, kadar air 35,47 %, kadar abu, 1,22 mg kadar zat besi, 2,25 % kadar protein, dan 1,17 % kadar serat kasar. Uji hedonik menunjukkan bahwa panelis paling menyukai mi dengan penambahan 20 % kacang merah, (skor rata-rata untuk warna, rasa, aroma dan tekstur masing-masing adalah 2,92, 2,88, 3,00, dan 3,04).
