Abstract

This research aimed to determine the effect of the best treatment based on physical and chemical characteristics of coconut milk added with Gum Arabic and Tween 80. The research used a Factorial Randomized Completely Design with two treatment factors and each treatment was repeated three times. The first factor (A) was the type of emulsifiers (gum arabic and tween 80) and the second factor (B) was the concentration of emulsifier (3%, 5%, and 7%). The observed parameters were physical characteristics (color, viscosity and stability), chemical characteristics (moisture content) and parameters for the best treatment were chemical characteristics (protein content and fat content). The result showed that the type of emulsifier had significant effects on color yellowness (b*), stability, viscosity and moisture content. The concentration of emulsifier had significant effects on color (lightness (L*) and yellowness (b*)), stability, viscosity and mositure content. While the interaction of type emulsifiers and concentration of emulsifier had significant effects on viscosity. The best treatment was coconut milk with tween 80 as type emulsifier and a concentration of 5% based on chemical and physical characteristics. The treatment had an average fat content value of 34,05% and protein content of 18,04% which had complied the standard according to SNI No. 01-3816-1995, and 60.59% stability, 22.03 mPa.s viscosity, lightness (L*) 56.69%, yellowness (b*) 10.24%, and water content 53.68%
