Abstract

This study aims to determine the formulation of crystal sugar with the addition of a combination of red ginger and turmeric extract that meets the requirements of SNI 01-3743-1995 and is preferred by the panelists. This research was carried out at the Chemical, Processing and Sensory Laboratory of Agricultural Products, Agricultural Product Technology Study Program, Faculty of Agriculture, Sriwijaya University, Indralaya on January to July 2022. This study used a Non-Factoral Completely Randomized Design (CRD) with a factor of mixing concentration red ginger and turmeric extracts into crystal palm sugar consisting of 10 treatment and repeated 3 times. Parameters observed were physical characteristics (yield and content of water insoluble parts), chemical characteristics (air content and ash content) and sensory characteristics (color, taste and scent). The results showed that the formulation of crystalline palm sugar with the addition of red ginger extract and turmeric extract had a significant effect on the yield, the content of the insoluble part in water, water content, ash content, and hedonic test on taste. Palm sugar 80%: red ginger extract 15%: turmeric extract 5% is the best treatment based on the highest score on the hedonic test on taste with a score of 4.05 which is preferred by the panelists and based on physical and chemical parameters that meet SNI palm sugar with a water content value 1.53%,1.77% ash content, 0.03% water insoluble part content and 66.11% yield value.
