Abstract

Tujuan penelitian yang dilakukan adalah untuk mengetahui karakteristik fisik dan kimia dari pati ganyong termodifikasi dengan metode pemanasan. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya pada bulan Juli 2011 sampai dengan November 2011. Penelitian yang dilakukan menggunakan metode Rancangan Acak Lengkap Faktorial (RALF) dengan 2 (dua) faktor perlakuan dan setiap kombinasi perlakuan diulang sebanyak 3 (tiga) kali. Faktor S adalah waktu pemanasan (30, 60 dan 90 menit) dan faktor T adalah suhu pemanasan (110°C, 120°C dan 130°C). Parameter yang diamati meliputi sifat fisik yaitu warna dan sifat kimia yaitu kadar air, kadar abu, kadar pati, kadar serat dan kadar pati resisten. Hasil penelitian menunjukkan bahwa peningkatan waktu pemanasan berpengaruh nyata terhadap nilai warna b, kadar air, kadar abu dan kadar pati. Peningkatan suhu pemanasan berpengaruh nyata terhadap semua nilai parameter. Interaksi peningkatan waktu pemanasan dan suhu pemanasan berpengaruh nyata terhadap kadar abu pati resisten tipe III ganyong. Perlakuan SiT3 (waktu pemanasan 30 menit dan suhu pemanasan 130°C) merupakan perlakuan terbaik dengan sifat fisik warna dengan nilai lightness 70,47%, warna a 5,37% dan warna b 13,77%, sifat kimia (kadar air 3,37%, kadar abu 1,02%, kadar serat pangan 10,51%, kadar pati 17,39% dan kadar pati resisten 36,93%).
