Abstract

Tujuan dari penelitian adalah untuk mengetahui pengaruh kematangan dan lama ultrasonikasi terhadap karakteristik sifat fisik dan kimia nanas (Ananas comosus (L.) Merr) segar potong varietas Queen. Penelitian ini menggunakan metode Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor perlakuan dan dilakukan pengulangan sebanyak tiga kali. Faktor pertama yaitu tingkat kematangan (masak penuh dan setengah matang) dan faktor kedua yaitu lama ultrasonikasi (10, 20, 30 dan 40 menit). Parameter yang diamati meliputi warna (Lightness (L*), greenness (-a*), yellowness (b*), dan total color difference kematangan), kekerasan, kadar gula total dan vitamin C. Hasil penelitian menunjukkan bahwa kematangan berpengaruh nyata terhadap nilai greeness (-a*), kadar gula total dan pH nanas segar potong setelah perlakuan ultrasonikasi. Lama ultrasonikasi berpengaruh nyata terhadap nilai greeness (-a*), yellowness (b*), kadar gula total dan pH nanas segar potong setelah ultrasonikasi. Interaksi kematangan dan lama ultrasonikasi berpengaruh nyata terhadap nilai kadar gula total dan pH. Perlakuan A2B4 (setengah matang, 40 menit) merupakan perlakuan terbaik berdasarkan nilai kadar gula total tingkat kematangan dengan karakteristik nilai lightness 35,37%, greenness 4,56, yellowness 9,03, total color difference masak penuh 8,23, total color difference setengah matang 4,93, kekerasan 30,33 gf, kadar gula total 11,23% brix, pH 4,70 dan nilai vitamin C 16,43 mg/100 g.
