Abstract

Background: Saliva is a complex body fluid that provides a general protective function for the hard tissues of the mouth. The salivary function will run optimally if the salivary flow rate increases. Increased salivary flow rate has an effect on increasing salivary pH, due to an increase in the buffering capacity of saliva. Yogurt has high nutrition and can be considered as a way to prevent caries because yogurt contains probiotics and the acidic nature that can stimulate salivary flow chemically. This study aimed to evaluate the effect of consuming yogurt on increasing pH and salivary flow rate. Methods: This study used quasi experimental study using a pretest-posttest with control group design involved 40 subjects who were divided into 2 groups which are the group who consumed yogurt and the control group who gargled aqua distillate. Saliva was collected by spitting method before treatment and at the 5th, 10th, and 15th minutes after treatment. The collected saliva was noted as the average salivary flow rate in mL/min. Salivary pH was measured using a pH indicator. Data were analyzed using Wilcoxon and Mann-Whitney U tests. Results: The results showed that after consuming yogurt, there was a significant increase in salivary pH and flow rate (p<0.05), except for the average pH value at the 5th minute. There was a significant difference in pH and salivary flow rate between treatment group and control group (p<0.05), except for the pH value at the 5th minute. Conclusion: Yogurt has an effect in increasing the pH and salivary flow rate.
