Abstract

The study of the drying temperature of pineapple (Ananas comosus (L) Merr) was brewed drink (Ananas comosus (L)) Merr) variety Queen based on different maturity level and drying temperature. This study used pineapples at maturity levels of 25-50%, 50-75%, and >75%, while the drying temperature used 50oC, 60 oC and 70oC RALF (Rancangan Acak Lengkap Faktorial) as a research method and followed by the Analysis of Variance (ANOVA) and further tests of the Honest Significant Difference (BNJ) at the 5% level. The quality of the dried pineapple pulp brewed drink was determined through four test parameters, namely yield, water content, color test and antioxidant activity test after the drying process. The highest yield value was obtained from sample A2B1 which was 25.14%, the lowest moisture content was obtained from sample A1B3 (maturity level 25-50% at 50 oC). The A3B1 treatment had the lowest IC50 value of 14.39 µg/ml which indicated verry strong antioxidant activity in pineapple with a maturity level of >75% and a drying temperature of 50oC, while A1B3 and A2B3 produce IC values 50 of 50, namely 79.96 µg/ml and 53.56 µg/ml showed that the treated samples had strong antioxidant activity.
