Abstract
Decreasing salivary pH due to acid fermentation of carbohydrates by oral bacteria causing demineralisation of tooth enamel. Snack foods that consumed between meals are containing high sugar, salt and fat but low nutrient. Children likes eating snack, especially sugary snacks. One of the way to prevent decreasing salivary pH after consuming carbohydrate containing foods is to consume foods that prevent it. Based on some studies, cheese could prevent decreasing salivary pH after consuming sucrose. The aim of this study was to known the effect of chewing cheese after consuming snack foods to salivary pH change at SDN 130 Palembang. This study was observed 60 students male and female of third grader from 8-9th years old divided into two groups (30 students each). The first groups was consumed snack food (chocolate wafer) and the second groups was chewing cheese after consumed snack food. Salivary pH before and after consumed snack foods and chewing cheese after consuming snack foods was measured to identify pH change with pH meter. After that, the salivary pH data of each groups was analyzed with paired t-test on SPSS version 19. Then salivary pH data after treatment of two groups was compared with independent t-test. Significancy of this test is 0,05. The result of this study showed the average score of salivary pH before and after consuming snack foods is 7,533 and 6,997 and average score of salivary pH before and after chewing cheese after consuming snack foods is 7,520 and 7,730. In conclusion, consuming snack foods could decrease salivary pH and chewing cheese after consuming snack foods could increase salivary pH.
