Abstract
Granulated sugar is an inseparable part of daily cooking, even though granulated sugar has a high Glycemic Index (GI) content. Meanwhile, various studies have shown that the principle of a low GI diet can reduce insulin resistance in people with Diabetes Mellitus. So, people with diabetes mellitus look for other sugar alternatives that are considered safe for blood glucose. This study aims to determine the comparison of glycemic index and glycemic load between gulo puan, granulated sugar and brown sugar. This research is a quantitative research that is experimental in nature. The population in this study were 15 people selected using a purposive sampling method. Data analysis in this study used the Mann-Whitney and Microsoft Excel. The results showed that the comparison of the glycemic index of the test foods was gulo puan (88.69%) and brown sugar (95.05%) and there was a significant difference in the glycemic index between gulo puan, granulated sugar and brown sugar (p-value 0.000 (< 0.05)). Comparison of the glycemic load of the test foods, namely gulo puan (44.34%) and brown sugar (47.52%). And there is a significant difference in glycemic load between gulo ladies and brown sugar (p- value 0.000 (<0.05)). For people with diabetes mellitus, gulo puan can be an alternative to sugar or a friendlier food sweetener because it doesn't cause fluctuations in blood glucose levels so it can reduce insulin resistance.
