Abstract

Tujuan penelitian adalah untuk mengetahui pengaruh dari penambahan konsentrasi glukosa dan susu skim pada minuman fermentasi laktat sari ubi jalar ungu. Penelitian dilaksanakan dengan menggunakan rancangan acak kelompok yang disusun secara faktorial dengan dua faktor perlakuan dan tiap kombinasi perlakuan diulang sebanyak tiga kali. Perlakuan pertama menggunakan glukosa dengan tiga taraf konsentrasi yang berbeda, yaitu 5%, 7% dan 9%. Perlakuan kedua menggunakan susu skim dengan tiga taraf konsentrasi, yaitu 4%, 7% dan 10%. Proses fennentasi berlangsung selama 72 jam pada suhu 37 C dengan menggunakan bakteri Lactobacillus casei strain shirota. Parameter yang diamati meliputi total bakteri asam laktat, kadar gula reduksi, kadar asam total. viskositas, nilai pH, stabilitas dan uji sensoris. Hasil penelitian menunjukkan bahwa penambahan konsentrasi glukosa berpengaruh nyata terhadap kadar gula reduksl, viskositas dan uji sensoris. Penambahan konsentrasi susu skim berpengaruh nyata terhadap semua parameter, sedangkan interaksi kombinasi perlakuan antara glukosa dan susu skim berpengaruh tidak nyata dalam penelitian ini. Berdasarkan basil uji sensoris minuman fermentasi laktat sari ubl Jalar ungu dengan formulasi glukosa 7% dan susu skim 4% merupakan perlakuan yang terbaik.
