Abstract

Tujuan penelitian adalah untuk mengetahui karakteristik fisik, kimia dan sensoris kue bangkit dengan penambahan tepung labu kuning dan tepung kelapa. Penelitian dilaksanakan di Laboratorium Kimia Hasil Pertanian dan Laboratorium Sensoris Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya pada bulan Juli 2012 sampai dengan Februari 2013. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) non factorial dengan faktor perlakuannya yaitu konsentrasi penambahan tepung labu kuning dan tepung kelapa per 100 g tepung terigu (A) dengan 5 perlakuan (50:0%, 37,5:12,5%; 25:25%, 12,5:37,5% dan 0:50%) yang masing-masing perlakuan diulang sebanyak 3 kali. Parameter yang diamati meliputi tekstur (kekerasan), warna, kadar air, kadar abu, kadar serat kasar serta uji sensoris. Hasil penelitian menunjukkan bahwa penambahan tepung labu dan tepung kelapa berpengaruh nyata terhadap karakteristik sensoris (aroma dan rasa). Perlakuan terbaik adalah kue bangkit dengan perlakuan 25%:25% tepung labu dan tepung kelapa (A3) dengan karakteristik sebagai berikut: tekstur 467,67 gf; warna: lightness 67,07%; chroma 29,40% dan hue 67,17°; kadar air 1,78% dan kadar abu 1,44%. Uji sensoris menunjukkan bahwa A5 adalah perlakuan yang disukai panelis. Hal ini ditunjukkan dari nilai aroma dan rasa masing-masing 2,96 dan 2,88.
