Abstract
terhadap karakteristik fisik, kimia, dan sensoris permen keras. Penelitian dilakukan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya pada bulan Oktober 2013 sampai dengan November 2013. Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan satu factor perlakuan yaitu penambahan rosella yang terdiri dari 6 taraf perlakuan (0%, 5%, 10%, 15%, 20%, 25%) dan setiap perlakuan diulang sebanyak tiga kali. Parameter yang diamati meliputi karakteristik fisik yaitu warna, karakteristik kimia (kadar air, kadar vitamin C, kadar gula reduksi dan uji aktivitas antioksidan) serta uji sensoris terhadap aroma, rasa, warna dan tekstur. Hasil penelitian ini menunjukkan bahwa penambahan rosella berpengaruh nyata terhadap sifat fisik yaitu warna (L, C, H), sifat kimia (kadar air, kadar vitamin C dan kadar gula reduksi) serta berpengaruh nyata terhadap uji sensoris pada penilaian panelis (rasa, warna dan tekstur), tetapi penambahan rosella pada pembuatan permen keras tidak berpengaruh nyata terhadap sifat kimia yaitu aktifitas antioksidan dan aroma.
