Abstract
Penelitian ini bertujuan untuk memperoleh formulasi bahan pembuatan tahu ikan dari ikan nila yang menghasilkan kualitas tahu ikan terbaik. Penelitian ini dilaksanakan di Laboratorium Teknologi Pengolahan Hasil Perikanan, Laboratorium Kimia Hasil Pertanian, Fakultas Pertanian dan Laboratorium Bioproses Kimia, Fakultas Teknik, Universitas Sriwijaya. Penelitian ini dimulai bulan Juni 2009 sampai Juni 2010. Rancangan yang digunakan adalah Rancangan Acak Kelompok (RAK) dengan formulasi konsentrasi daging ikan berbeda (0%, 10%, 15%, 20%, 25%, 30%) dan diulang sebanyak tiga kali. Parameter yang diamati meliputi kadar air, kadar protein, kadar lemak, warna (lightness, chroma dan hue) dan sensoris. Hasil penelitian menunjukan bahwa penambahan konsentrasi daging lumat tidak berpengaruh terhadap kadar air dan lightness tetapi memberikan pengaruh terhadap kadar protein, kadar lemak, chroma, hue, tekstur dan sensoris (warna, rasa, aroma, tekstur dan kenampakan). Hasil terbaik terdapat pada perlakuan A3 dengan formulasi konsentrasi daging ikan lumat 20%.
