Abstract

Tujuan penelitian adalah untuk mengetahui karakteristik fisik, kimia dan sensoris tempe kedelai dengan penambahan ampas kelapa. Penelitian ini dilaksanakan pada bulan Juni 2013 sampai dengan September 2013 di Laboratorium Kimia Hasil Pertanian dan Laboratorium Sensoris, Jurusan Teknologi Pertanian, Universitas Sriwijaya, Indralaya. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) non factorial yaitu adalah: penambahan ampas kelapa (0%, 2,5%, 5%, 7,5%, dan 10%) dan setiap perlakuan diulang sebanyak tiga kali ulangan. Parameter yang diamati meliputi karakteristik fisik yaitu tekstur, karakteristik kimia (kadar abu, kadar air, protein dan serat kasar) dan uji sensoris (warna, aroma dan tekstur). Hasil penelitian menunjukkan bahwa penambahan ampas kelapa berpengaruh nyata terhadap sifat fisik (tekstur), sifat kimia (protein dan serat kasar) serta berpengaruh terhadap uji sensoris pada penilaian panelis (warna, aroma dan tekstur) tapi tempe kedelai dengan penambahan ampas kelapa tidak berpengaruh nyata tarhadap sifat kimia (kadar abu dan kadar air). Perlakuan terbaik pada penelitian ini adalah Ai (penambahan 2,5% ampas kelapa) dengan karakteristik berikut: tekstur 249,233 gf, kadar abu 1,044%, kadar air 63,99%, kadar protein 8,006%, kadar serat kasar 13,738% dan hasil uji sensoris dengan kategori suka ( warna 3,12, aroma 3,04, dan tekstur 2,68).
