Abstract
ALDI TRI SAPUTRA. Effect of Substitution of Kepok Banana Flour and Addition of Beet Tuber on Physical, Chemical, and Organoleptic of Donut (Supervised by Agus Wijaya and Basuni Hamzah). The Objective of this research was to determine the effect of substitution kepok banana flour and addition beet tuber on the physical, chemical, and organoleptic of donut. The research was conducted in Agricultural Chemistry Laboratory, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, Indralaya. This research was conducted in October 2017 until July 2019. The research used Factorial Completely Randomized with 2 treatment factors and each was repeated three times. The first factor was the substitution of kepok banana flour (0, 10, 20, and 30%) and the second factor was the addition beet tuber (20 and 30%), each treatment was repeated three times. The observed parameters included physical (texture and color), chemical characteristics (moisture content, ash content and antioxidant activity) and organoleptic tests (texture, flavor, taste and color). The results showed that the substitution of kepok banana flour had a significant effect on texture, moisture content dan ash content. While the addition beet tuber significantly affected the color (lightness, redness, and yellowness) and antioxidant activity. Interaction of the two factors showed no significant effect on all paramaters. The best treatment based on organoleptic characteristic in donut was treatment with 10% of substitution kepok banana flour and addition 30% addition of beet tuber with the following hedonic score : 3.32 , 3.08 , and 2.96 for color, texture, and taste, respectively.
