Abstract

This study aims to analyze the characteristics of the chemical and organoleptic components of furikake Spirulina platensis based on the concentration of raw materials in the form of katsuobushi and Spirulina platensis nori. This study was conducted using a randomized block design (RBD) with 1 factor consisting of 3 treatments with 4 repetitions with treatment concentrations (A1: Nori Spirulina platensis 10% and katsuobushi 90%, A2: Nori Spirulina platensis 20% and katsuobushi 80%, A3: Nori Spirulina platensis 30% and katsuobushi 70%). Parameters observed included chemical analysis (moisture content, ash content, fat content, protein content, and carbohydrate content) and hedonic quality analysis (color, aroma, taste and texture). The results showed that the use of Spirulina platensis nori and katsuobushi showed that the differences were significantly different for the parameters of water content (4.8225% - 6.075%), parameters of protein content (33.84% - 43.3525%) and parameters of carbohydrate content (24, 7% - 26.4275%) but not significantly different from the parameters of ash content (5.395% - 6.0275%) and parameters of fat content (8.8825% - 6.455%). The results of the treatment study using Spirulina platensis nori and katsuobushi showed that these differences significantly affected the color parameters (2.72% - 3.4%) and taste parameters (2.56% - 3.6%) but did not significantly affect aroma (3.6% - 3.88%) and texture parameters (3.88% - 4%).
