Abstract

Tujuan dari penelitian ini adalah untuk mengetahui pengaruh suhu dan lama penyangraian terhadap karakteristik kopi arabika semendo (Coffea arabica L.) dengan menggunakan mesin roasting ACR. Penelitian ini dilaksanakan pada bulan Juni 2022 sampai bulan Desember 2022 di UMKM Kopi Tanah Puyang di Bandar Agung, Kecamatan Lahat, Kabupaten Lahat, Sumatera Selatan dan Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya. Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial dengan dua faktor perlakuan suhu penyangraian (A) dan lama penyangraian (B). Setiap perlakuan diulang sebanyak tiga kali. Perlakuan suhu penyangraian (A) terdiri dari (A1) suhu 180oC, (A2) suhu 200oC, (A3) suhu 220oC. Perlakuan lama penyangraian (B) terdiri dari (B1) 8 menit, (B2) 10 menit dan (B3) 12 menit. Parameter pengukuran yaitu nilai warna (lightness), tekstur (kekerasan) dan uji organoleptik (warna, aroma dan rasa). Hasil penelitian menunjukkan bahwa pengaruh suhu penyangraian berpengaruh nyata terhadap nilai warna (lightness), tekstur (kekerasan). Lama penyangraian berpengaruh nyata terhadap warna (lightness), tekstur (kekerasan) dan interaksi suhu dan lama penyangraian terhadap nilai lightness (L*) dan organoleptik (warna, aroma dan rasa) kopi arabika semendo.
