Abstract
AFNI ALEKTA PUTRI, Effect of Using Edible Coating Made Form Corn Starch and Chitosan on the Characteristics of Eco-straw Water Chesnut (Eleocharis dulcis (Supervised by SITI HANGGITA R.J). This study aimed to determine the effect of the use edible coating made from corn starch and chitosan on the characteristics of eco-straw water chesnut (Eleocharis dulcis). This study was conducted using a randomized block design (RBD) consisting of differences in chitosan concentrations with 4 treatments with 3 times repetition with the following treatment concentrations: A0 (100% corn starch: 0% chitosan) as a control; A1 (85% corn starch : 15% chitosan); A2 (80% corn starch: 20% chitosan); A3 (75% corn starch: 25% chitosan). The parameters observed in the study of the using of edible coating on water chesnutstraws are, diameter, shrinkage weight analysis, resistance of wateranalysis and water vapour transmission rate. The research data were analyzed using ANOVA to explain the effect and significance of treatment to determine the best one. The results showed that the effect of adding edible coating made from corn starch and chitosan was significantly different on shrinkage weight (1.05%-2.24%), resistance of water (94.89%-98.96%) and water vapor transmission (5.24-7.28 grams/hour.m2) but did not differ significantly from straw diameter (5.28 mm-5.34mm).
