Abstract

The objective of the research was to determine effect of sweet corn (Zea mays var saccharata Sturt) and water ratio and corn storage period on physical, chemical and organoleptic characteristics of jelly drinks. This study used a Factorial Completely Randomized Design (RALF) with two treatment factors and each treatment analysis was repeated three times. The first factor is the ratio of corn with water and the second factor of the storage period of sweet corn. Parameters observed include physical characteristics (viscosity, syneresis and color), chemical characteristics (moisture content and total sugar content), and organoleptic tests (color, flavor, taste and texture). The results showed that the ratio of corn water effect on syneresis, color (lightness and yellowness), moisture content, total sugar content, sweet corn storage period had a significant effect on syneresis, color (yellowness) and total sugar content, while the interaction had no effect real to all parameters. The ratio treatment of corn with water 1:4 and 0 day corn storage period is the preferred treatment with consideration of crude fiber content and average hedonic score for preferred color, flavor, taste and texture.
