Abstract

Food poisoning incidents often occur in various Islamic boarding schools in Indonesia. The implementation of food hygiene and sanitation is crucial in preventing foodborne illnesses. The purpose of this study is to analyze the application of food hygiene and the presence of Escherichia coli (E. coli) bacteria in food, dining utensils, and clean water at Ar-Riyadh Islamic boarding school. This qualitative research adopts a descriptive approach. There were 8 informants in this study. Information was gathered through in-depth interviews, observation sheets, and laboratory tests. The results of the study showed that samples of white rice, soto broth, and glasses tested negative for E. coli, while samples from food trays and clean water tested positive for E. coli. This indicates that the hygiene and sanitation practices at the Islamic boarding schools do not meet the health standards set by the Indonesian Ministry of Health Regulation No. 1096 of 2011. Issues identified include direct manual handling of food, inadequate use of personal protective equipment, infrequent handwashing with soap, food preparation conducted in open areas, improper use of utensils as cooking equipment, use of untreated water in food preparation, inadequate attention to food storage temperatures, transportation of food using becaks (cycle rickshaws), unpleasant odors in the food service area, open and unclean storage practices, and vulnerability to contamination by vectors and other pests, as well as failure to meet the physical requirements for clean water. In conclusion, the food hygiene and sanitation practices at Ar-Riyadh Islamic boarding school are severely lacking, which may lead to contamination by E. coli bacteria. It is hoped that there will be an increase in awareness and knowledge among the Islamic boarding schools management regarding the implementation of food hygiene and sanitation.
