Abstract

This study aims to determine the physical, chemical and sensory characteristics of super red dragon fruit jam. This study used a non-factorial Completely Randomized Design (CRD) with 6 treatment levels and 3 repetitions. The treatment factors were CMC concentrations (0%, 0.1%, 0.2%, 0.3%, 0.4% and 0.5%). Parameters observed included physical characteristics (viscosity, smearability, color including L*, a*, b*), chemical characteristics (total dissolved solids, pH, and water content) and sensory characteristics (texture). The results showed that the CMC concentration had a significant effect on the value of viscosity, spreadability, total dissolved solids, pH, water content, and sensory characteristics (texture). Treatment D (0.3% CMC) is the best treatment based on sensory characteristics of texture 3.69 physical characteristics, namely viscosity 63,60 Pa. s, smearability 21.37 cm, chemical characteristics, namely total dissolved solids 65.20 obrix, pH 3.44, moisture content 31,57%. The value of total dissolved solids and pH in treatment D of super red dragon fruit jam complied with SNI 3746-2008 standards
