Abstract

This study aims to determine Physico-chemical and Sensory Characteristics Kerupuk from Snakehead (Channa Striata) Fish with Addition of Red Dragon Fruit (Hylocereus polyrhizus) this research was conducted in January to March 2019. The method of this study used a randomhized block design (RBD) with stage treatment was repeated 3 times. Factors treatment consist of the addition of the red dragon fruit concentration (0%, 10%, 20% and 30%). Parameters that observed were chemical anaysis (water), analysis physico (color, texture and swelling ability) and sensory analysis (appearance, aroma, taste and texture). The results showed that the treatment of different concentration snakehead had a significant effecy on water (11,11%-11,88%) and on crispiness (1392,67gF–943,67gF) the results showed that the treatment of different concentration snaked head had a significant effect on chroma.
