Abstract

Snack food is food and drink that is processed by food manufactures at the point of sale and served as ready-to-eat food for sale to the public other than those served by catering services, homes/restaurants and hotels (Ministry of Health, 2003). Poisoning caused by food tends to increase, one of the causes of food poisoning is due to the lack of attention to personal and environmental hygiene in the food processing process. This study used a qualitative method using data collection techniques through observation and in depth interviews, as well as documentation with a total of 5 grilled meatball traders from a population of 15 grilled meatball traders in Muaradua District. This study aims to look at efforts to apply food sanitation hygiene to traders grilled meatball snacks starting from the selection of materials, transportation, processing, storage, and serving of food. Efforts in implementing food sanitation hygiene for street food traders in the Kelurahan in Muaradua District were obtained by reasearchers by observing directly the spaciousness using observation sheets and in depth interviews were reduced to transcripts, presented in narrative form, and conclusions drawn. The selection of raw materials, transportation, storage of grilled meatballs that are sold around Muaradua District, Ogan Komering Ulu Selatan District in 2023 fulfills the health requirements in accordance with Permenkes no 942 of 2003 while the sanitary hygiene of processing and serving grilled meatballs around Muaradua District, Ogan Komering Ulu Selatan District has not fulfilled health requirements in accordance with Permenkes no 942 of 2003. The content of borax ingrilled meatballs sold around Muaradua District, Ogan Komering Ulu Selatan District has met the health requirements according to Permenkes no.1168/MENKES/PER/X/1999, which does not contain borax.
