Abstract

Edible straw is a straw that can be consumed in a cylindrical shape made from swamp taro flour. This research aims to determine the effect of different concentrations of addition of carrageenan and sorbitol as well as the interaction between the two. This research was conducted using the Randomized Group Factorial Design (RAKF) method. 3 replications and 2 treatment factors, carrageenan (A1), 4% (A2), 6% and sorbitol (B1), 10% (B2), 12%. The parameters tested include absorption capacity for mineral water and cola water, vapor transmission, hardness and biodegradability. The edible straw test results showed that the absorption capacity of soda water from the formulation (A1B1) was 185.5%, (A1B2) 190.8, (A2B1) 200.2%, and (A2B2) 216.2%. The edible straw test results showed that absorption capacity of mineral water the formulation (A1B1) 178.28%, (A1B2) 180.85, (A2B1) 197.07%, and (A2B2) 198.33%. The water vapor transmission edible straw test results the formulation (A1B1) 1.53 grams/day, (A1B2) 1.37 grams/day, (A2B1) 1.25 grams/day, and (A2B2) 1.10 grams/day. The results of the edible straw test, the texture hardness of the formulation (A1B1) 25.00 gf, (A1B2) 27.50 gf, (A2B1) 30.00 gf, and (A2B2) 32.67 gf. The edible straw biodegradation test results from the formulation (A1B1) 67.94%, (A1B2) 71.52%, (A2B1) 74.07%, and (A2B2) 75.78%. The research results showed that the different concentrations of carrageenan and sorbitol used showed significant differences in the absorption capacity of soda water, vapor transmission, hardness, while the addition of carrageenan had a significant effect and the addition of sorbitol had no significant effect on mineral water and biodegradation. Meanwhile, the interaction between the two has no real effect on all parameters. The best parameters in this research were the addition of 4% carrageenan and 10% sorbitol. Edible straw merupakan sedotan yang dapat dikonsumsi mempunyai bentuk silinder berbahan dasar tepung talas rawa. Penelitian ini bertujuan ingin mengetahuipengaruh perbedaan konsentrasi penambahan dari karagenan dan sorbitol serta interaksi dari keduanya. Penelitian ini dilakukan dengan menggunakan metode Rancangan Acak Kelompok Faktorial (RAKF). 3 ulangan dan 2 faktor perlakuan yaitu karagenan (A1), 4% dan (A2), 6% dan sorbitol (B1), 10% dan (B2), 12%. Parameter yang diuji meliputi daya serap terhadap air mineral dan air cola, transmisi uap, kekerasan dan biodegradibilitas. Hasil uji edible straw daya serap air soda dari formulasi (A1B1) nilai 185,5%, (A1B2) nilai 190,8, (A2B1) nilai 200,2%, dan (A2B2) nilai 216,2%. Hasil uji edible straw daya serap air mineral dari formulasi (A1B1) nilai 178,28%, (A1B2) nilai 180,85, (A2B1) nilai 197,07%, dan (A2B2) nilai 198,33%. Hasil uji edible straw transmisi uap air dari formulasi (A1B1) nilai 1,53 gram/hari, (A1B2) nilai 1,37 gram/hari, (A2B1) nilai 1,25 gram/hari, dan (A2B2) nilai 1,10 gram/hari. Hasil uji edible straw kekerasan tekstur dari formulasi (A1B1) nilai 25,00 gf, (A1B2) dengan nilai 27,50gf, (A2B1) nilai 30,00 gf, dan (A2B2) nilai 32,67 gf. Hasil uji edible straw biodegradasi dari formulasi (A1B1) nilai 67,94%, (A1B2) nilai 71,52%, (A2B1) nilai 74,07%, dan (A2B2) dengan nilai 75,78%. Hasil penelitian menunjukkan bahwa perbedaan konsentrasi karagenan dan sorbitol yang digunakan menunjukkan perbedaan nyata terhadap daya serap air soda, transmisi uap air, kekerasan sedangkan penambahan karagenan berpengaruh nyata dan penambhana sorbitol tidak berpengaruh nyata terhadap air mineral dan biodegradasi. Sementara interaksi keduanya tidak berpengaruh nyata terhadap semua parameter. Parameter yang terbaik pada penelitian ini yaitu penambahan karagenan 4% dan sorbitol 10%.
