Abstract

This study aimed to determine the effect of seaming delay time, use of media types and storage time on canned pineapple organoleptic, internal corrosion level of the cans and pH of canned pineapple. This research was conducted from August 8 to October 7, 2023 at PT Great Giant Pineapple, Terbanggi Besar, Central Lampung, Lampung. The research methods used are non-parametric statistical analysis and parametric statistics. Non parametric statistical analysis used the Kruskal Wallis test and Mann Whitney test for the parameters of the internal corrosion level of cans. As for the parametric statistics analysis used Completely Randomized Design Factorial (RALF) with three treatment factors and each treatment was repeated three times. Treatment factor A seaming delay time (0 hours, 1 hour, 2 hours, 3 hours and 4 hours), treatment factor B media type (natural juice and heavy syrup) and treatment factor C storage time (1 day and 30 days). The parameters observed were organoleptic test (texture, taste and aroma), internal corrosion level of the cans and pH of the media. The results showed that in the organoleptic test there was no difference in the texture, taste and aroma of canned tidbit pineapple with the treatment of delayed seaming time, media type and storage time. The treatment of seaming delay time dan storage time had a significant effect on the internal corrosion level of the cans. In addition, the treatment of seaming delay, media type, storage time and the interaction between media type and storage time had a significant effect on the pH of the media. Based on the three treatments, the internal corrosion level of the cans that was still acceptable was at a maximum 2 hours of seaming delay time. The pH value of the media in the three treatments was in the standard range set by PT Great Giant Pineapple.
