Abstract
Penelitian ini bertujuan untuk mengetahui komposisi kimia (air, abu, protein, lemak) serta profil asam lemak dan asam amino ikan lele lokal dan lele dumbo. Penelitian ini dilakukan pada bulan Januari 2019 dengan Februari 2019. Metode penelitian yang dilakukan pada penelitian ini menggunakan metode eksperimental labolatoris dan analisa data dilakukan secara deskriptif. Hasil uji kimia menunjukkan lele lokal memiliki kadar air 70,46%, abu 0,686%, lemak 3,84%, dan protein 23,57% sedangkan pada ikan lele dumbo, kadar air 63,24%, abu 0,853%, lemak 6,78%, dan protein 25,99%. Berdasarkan uji asam amino lele lokal mengandung 8 jenis asam amino esensial dengan total 9.6672,44 mg/kg dan 7 macam asam amino non esensial dengan total asam amino sebesar 8.4116,58 mg/kg. Lele dumbo mengandung 8 jenis asam amino esensial dengan total 8979,23 mg/kg dan 7 asam amino non esensial dengan total asam amio sebesar 17743,2 mg/kg. Total asam lemak pada lele lokal sebesar 1,0808% sedangkan pada lele budidaya sebesar 6,78%. Berdasarkan analisis statistik indipendent sampel t-test terdapat perbedaan yang signifikan pada kadar lemak dan profil asam lemak.
